Fruit Tart with Apple and Orange

Ingredients
  

For shortcrust pastry:

  • 1 cup flour
  • 2 pcs eggs
  • 3 tbsp butter
  • 2 tbsp granulated sugar
  • 1 tsp leavening agent

For cream:

  • cup cream cheese curd Cream Cheese, Mascarpone, Philadelphia
  • 4 tbsp granulated sugar
  • 1 tbsp sour cream with 33-35% fat
  • 1 tbsp gelatin
  • 1 tsp vanilla sugar
  • apple and orange finly sliced

Instructions
 

For shortcrust pastry:

  • Beat the soft room temperature butter with sugar for 2-3 minutes on medium speed of the mixer.
  • Once the butter turns white, add the room temperature eggs and mix for a couple of minutes on medium speed until you achieve a layered whipped mixture.
  • Mix the flour with the baking powder and add it to the butter and egg mixture. Stir with a spatula or hands until the dough is homogeneous. If needed, add a little more flour and stir until the dough easily falls off the walls of the dish. The dough might be slightly sticky to your hands.
  • Line a mold with baking paper or grease it with oil. Spread the dough into the mold and form the sides.
  • The dough should be about ¼ inches thick. Place baking paper on top and place beans or other weights on top.
  • Bake in a preheated oven at 350℉ (180°C) for 20-30 minutes, depending on the thickness of the cake.
  • Remove the weight and baking paper from the hot cake and let it cool.

For cream:

  • Whip the cream with sugar and vanilla sugar until it thickens and increases in volume.
  • Add the chosen cream cheese (Philadelphia, Mascarpone, Cream Cheese) and mix with a mixer on medium speed until smooth.

Assembling:

  • Fill the cooled cake with the cream and decorate with fruits on top.
  • Cover with diluted jelly and let it stand in the refrigerator for at least 2 hours
