Belarusian Potato Dumplings

Ingredients
  

  • 10 pcs medium-sized potatoes
  • 2 pcs medium-sized onions
  • 1 pc egg
  • 1 tbsp potato starch
  • 1 tbsp lemon juse
  • pinch nutmeg
  • salt,oregano, bay leave to taste

Instructions
 

  • Peel the onions. Grate the onion on a fine grater. I recommend starting with the onion specifically, as this will prevent the potatoes from changing color.
  • Wash and peel the potatoes. Grate the potatoes on the same grater as the onion. It is desirable to do everything quickly so that the potato mass does not turn black. If you see that the mass changes color, add 1 tablespoon of lemon juice.
  • Stir the potato mixture and squeeze it through gauze. Add egg, salt, and nutmeg to the squeezed potato mixture.
  • Do not pour out the squeezed potato juice, but leave it to stand in a bowl for a while. After a couple of minutes, drain the juice from the bowl, there will be a layer of starch at the bottom.
  • Add the starch to the potato mixture. You can also add 1 tablespoon of potato starch from the store.
  • Place a large saucepan half-filled with water on the fire. Roll the potato dough into balls slightly larger than walnuts.
  • When the water boils, salt, add a couple of bay leaves and peas of oregano pepper. Carefully drop the dumplings into the water one by one. When all the dumplings are in the water, gently stir them to make sure that none of them stick to the bottom. The dumplings should be in a single layer (otherwise they may stick to each other).
  • Cook the dumplings for 30-40 minutes.
  • You can serve the dumplings with sour cream or with fried onions and bacon, brisket, or lard.
