Ingredients
  

  • 14 oz chicken fillet
  • 7 oz fresh broccoli
  • 2 oz cheese to taste
  • 2 pcs large-size eggs
  • 2 tbsp all-purpose flour
  • 3 tbsp vegetable oil
  • 1 tbsp sour cream
  • 2 cloves garlic
  • salt to taste

Instructions
 

  • Start by boiling the broccoli in a pot for 5 minutes until it’s tender. Drain and allow it to cool.
  • Finely chop the cooled broccoli into small pieces.
  • Next, finely chop the chicken fillets into small pieces as well.
  • Grate the cheese using a fine grater.
  • In a deep bowl, mix the chopped chicken, chopped broccoli, and grated cheese.
  • Chop the garlic cloves finely or use a garlic press to mince them, and add them to the bowl with the chicken and broccoli mixture.
  • In a separate bowl, combine sour cream, eggs, salt, and flour. Mix everything thoroughly to create a batter.
  • Heat a frying pan and add a spoonful of vegetable oil to it.
  • Using a tablespoon, scoop out portions of the mixture and drop them onto the hot frying pan, shaping them slightly. It’s better to make small fritters.
  • Fry the fritters on medium heat, flipping them to cook on both sides. After flipping, cover the pan with a lid and continue to fry on low heat for 3 minutes to ensure they are cooked through.
  • Continue frying all the fritters in this manner, adding more vegetable oil to the pan as needed.
  • You can serve these delicious chicken and broccoli pancakes with your choice of garnish.
