Ingredients
  

  • 3 oz funchoza
  • 1 pc chicken fillet about 6 oz
  • 1 pc red bell pepper
  • 1 pc cucumber
  • 1 pc carrot
  • ½ pc large onion
  • 7-8 feathers green onion
  • 2 tbsp white sesame seeds
  • 2 tbsp vegetable oil for frying
  • salt and ground black pepper to taste
  • soy sauce for serving

Instructions
 

  • Put funchoza in a bowl, pour hot water, and leave for 5-7 minutes. Drain the water and set the funchoza aside.
  • Rinse the chicken fillet, pat it dry, and cut it into small pieces.
  • Peel the onion and cut it into thin half-rings.
  • Pour vegetable oil into a frying pan and add the chopped chicken fillets. Fry the chicken fillets over high heat for about 5 minutes, stirring constantly.
  • Add the onions to the pan, sprinkle with salt, and continue cooking the chicken over moderate heat for about 2-3 minutes, stirring. Remove the skillet from the heat and allow it to cool.
  • Meanwhile, wash and slice the tomato and cucumber. Peel the carrots and grate them coarsely.
  • Peel the garlic and chop it very finely. Heat 2 tablespoons of vegetable oil in a frying pan and fry the garlic until golden for about two minutes.
  • Add the grated carrots and bell pepper to the pan and stir. Fry everything for about 5 minutes, stirring occasionally, until cooked through. Add salt and ground pepper near the end of cooking.
  • In a large bowl, combine the funchoza, cooked chicken and vegetables, and green onions. Pour in the soy sauce and mix thoroughly.
  • Let the Funchoza with chicken and vegetables sit at room temperature for at least an hour to allow the flavors to meld.
  • Before serving, sprinkle with white sesame seeds and optionally serve with additional soy sauce.

Notes

  • If you can’t find funchoza, you can substitute it with other types of noodles such as rice noodles or vermicelli.
  • You can use other types of protein such as beef, pork, or tofu instead of chicken.
  • If you’re allergic to peanuts, you can substitute them with cashews or almonds.
  • You can add or substitute other vegetables such as bell peppers, carrots, or snow peas.
