Ingredients
  

  • 3 ½ cups all-purpose flour
  • 1 ½ cups water
  • 1 tsp salt
  • 4 tbsp butter
  • 5 tbsp sunflower oil
  • 9 oz cottage cheese
  • 5 oz hard cheese
  • A large bunch of parsley

Instructions
 

  • Mix water with salt in a bowl.
  • Add the flour and knead it into a lean dough.
  • Cover the dough with cling film and let it rest for 10 minutes.
  • In another bowl, mix the cottage cheese with grated hard cheese and chopped parsley.
  • Divide the rested dough into 6 equal parts, and roll each part into a ball.
  • While you work with one part of the dough, cover the rest with foil to prevent drying out.
  • Roll each ball into a thin circle. You should have 6 thin circles of dough.
  • Place these thin circles on top of each other, brushing each layer with a mixture of melted butter and vegetable oil.
  • Cover the stacked circles and let them rest for 20 minutes.
  • Roll out each of the rested dough rounds as thin as possible until they are nearly transparent.
  • Place the prepared filling along one edge of each rolled-out dough round.
  • Roll up the dough into a long, thin roll, enclosing the filling. Repeat this process for all the dough and filling.
  • Place the resulting “sausages” on a baking tray.
  • Brush the tops of the rolls with oil to give them a nice golden color while baking.
  • Bake in an oven preheated to 350°F (180°C) for about 35 minutes or until they are golden brown and crispy.
  • Once the puffs are done baking, let them cool slightly before serving.
