Ingredients
  

  • 3 lbs medium-size squid
  • 3 pcs peppercorns
  • 1 pc bay leaf
  • ½ cup olive oil
  • ½ cup white wine
  • 3 cloves garlic
  • 1 bunch parsley
  • salt and pepper to taste

Instructions
 

  • Start by preparing the squid. Remove the guts and skin, and wash them thoroughly in cold water to get rid of any impurities. Keep the squid whole without opening them. Season them with salt and pepper.
  • Heat a pan with the olive oil. Add the crushed garlic cloves with their skins on, the bay leaf, and the peppercorns to the pan. Allow the garlic cloves to brown slightly without burning.
  • Once the garlic is browned, add the seasoned squid to the pan. Fry the squid on both sides over low heat. Be careful not to overcook them, as squid can become tough if cooked for too long.
  • Pour in the white wine. If necessary, you can add a little water to ensure that there is enough liquid to cook the squid. The wine will add a wonderful flavor to the dish.
  • Allow the squid to cook in the pan for a few minutes until they are cooked through and tender. This should only take a few minutes.
  • Once the squid is cooked, sprinkle the dish with freshly chopped parsley. The parsley will add a burst of freshness and color to the dish.
