Moldavian Chorba Soup

It is similar to the Shurpa, but it has its unique Moldavian flavor and taste.

Ingredients
  

  • 1 lb beef
  • 6 pcs potatoes
  • 2 pcs tomatoes
  • 2 pcs carrots
  • 1 pc onion
  • 2 pcs bay leaves
  • tbsp wine vinegar
  • 1 tbsp sugar
  • 4 tbsp vegetable oil
  • herbs and garlic to taste
  • salt and ground black pepper to taste

Instructions
 

  • Wash the meat, pour cold water, and cook until ready for 40 minutes. The broth should be slightly salted. It is also not superfluous to add a bay leaf to it.
  • Onions are cleaned, finely chopped, and sauteed in vegetable oil. Fry the onions for 5 minutes on medium heat and make sure they don’t burn.
  • When the onions are soft, pour the carrots into the pan. For this recipe, it is better to use carrots cut into straws. Fry the vegetables in vegetable oil for 5 minutes.
  • Dice the tomatoes and add them to the skillet to the onions and carrots. Sauté the vegetables for 5 minutes stirring constantly.
  • When the meat is boiled, take it out of the broth. Cut potatoes into cubes or straws and send them to the boiling broth. Cook the soup until the potatoes are ready.
  • After 20 minutes check the potatoes for readiness. If the potatoes are already boiled, add our roast to the pot. Stir everything. Add salt and pepper to taste. Bring the soup to a boil and cook for about 10 minutes.
  • Add to the soup chopped meat, spices and once again taste for salt. Add vinegar, let the soup simmer for a few minutes, and turn off the stove.
  • Serve ready chorba with garlic and herbs.
