Ingredients

  • 1 pack mixed green salad leaves
  • ½ pack goat’s cheese
  • 1 handful coarsely chopped walnuts
  • ½ loaf stale bread
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • salt and black pepper to taste

Instructions

  • Preheat the oven to 350°F (175°C).
  • Slice the stale bread into cubes or small pieces.
  • Place the bread cubes on a baking sheet and drizzle with a little olive oil.
  • Bake in the preheated oven for about 10-15 minutes until the croutons turn golden brown and crispy. Alternatively, you can toast the bread cubes in a toaster until they’re crispy.
  • In a small bowl, mix the honey, balsamic vinegar, and olive oil to make the dressing. Set it aside.
  • Wash the mixed green salad leaves thoroughly and drain excess water. Place them in a large mixing bowl.
  • Add the coarsely chopped walnuts to the bowl with the mixed greens.
  • Pour the prepared dressing (the honey, balsamic vinegar, and olive oil mixture) over the salad ingredients.
  • Season the salad with salt and black pepper according to your taste. Toss the salad gently to ensure even distribution of the dressing and seasoning.
  • Once the salad is mixed and seasoned, add the crispy croutons.
  • Crumble the goat’s cheese over the salad using your hands. The cheese will add a creamy texture to the salad.
  • Gently toss the salad again to incorporate the croutons and goat cheese evenly with the other ingredients.
