Ingredients
  

  • 3 lbs potatoes peeled and cut into chunks
  • 14 oz salmon fillets skinless and boneless
  • 14 oz haddock fillets skinless and boneless
  • 7 oz smoked haddock fillets skinless and boneless
  • 2 oz butter
  • 2 oz all-purpose flour
  • 2 ½ cups whole milk
  • 2 oz grated Cheddar cheese optional
  • 1 cup frozen peas
  • 1 cup sweetcorn kernels
  • 4 pcs hard-boiled eggs peeled and halved
  • 1 pc leek finely sliced
  • ½ bunch parsley chopped
  • 1 tbsp Dijon mustard
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 390°C (355°C fan).
  • Place the potatoes in a large pan, cover with water, add a pinch of salt, and boil until tender. Drain and mash with butter until smooth.
  • In a separate pan, poach the salmon, haddock, and smoked haddock in the milk for about 5 minutes until just cooked. Remove the fish, flake it into large chunks, and set aside. Save the poaching milk.
  • In a large pan, melt the butter over medium heat. Add the leeks and cook until softened.
  • Stir in the flour and cook for 1-2 minutes. Gradually add the reserved poaching milk, stirring constantly to avoid lumps.
  • Once the sauce has thickened, add the Dijon mustard, salt, and pepper to taste. Stir in the flaked fish, peas, sweetcorn, and chopped parsley.
  • Spoon the fish mixture into a baking dish. Place the halved hard-boiled eggs on top.
  • Spread the mashed potatoes over the fish mixture, ensuring it covers the entire surface. Use a fork to create a textured pattern on the top.
  • If desired, sprinkle grated cheddar cheese on top of the mashed potatoes.
  • Bake in the preheated oven for 25-30 minutes or until the top is golden brown and the filling is bubbling.
