Mushroom Lasagna

Mushroom Lasagna is a delightful twist on the classic Italian favorite. Layers of tender lasagna noodles intermingle with a rich mushroom-tomato sauce, creamy ricotta cheese, and gooey mozzarella.

Ingredients
  

  • 1 lb lasagna noodles
  • 1 lb ground beef
  • 1 lb mushrooms (any variety you like) sliced
  • 1 pc medium onion finely chopped
  • 1 can crushed tomatoes 28 oz
  • 2 cups mozzarella cheese shredded
  • 1 cup parmesan cheese grated
  • 2 cups ricotta cheese
  • 3 cloves garlic minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Fresh basil or parsley for garnish
  • Salt and pepper to taste

Instructions
 

Prepare the Sauce:

  • In a large skillet, cook the ground beef over medium heat until browned. Remove any excess fat.
  • Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent.
  • Add the sliced mushrooms and cook until they release their moisture and start to brown.
  • Pour in the crushed tomatoes and season with dried basil, dried oregano, salt, and pepper. Simmer for about 15 minutes, stirring occasionally.

Cook the Lasagna Noodles:

  • Boil the lasagna noodles according to the package instructions. Drain and set aside.

Assemble the Lasagna:

  • Preheat your oven to 375°F (190°C).
  • In a greased 9×13-inch baking dish, spread a thin layer of the mushroom-tomato sauce.
  • Layer lasagna noodles on top of the sauce.
  • Spread a layer of ricotta cheese over the noodles.
  • Add a layer of sliced mushrooms.
  • Sprinkle with shredded mozzarella cheese.
  • Repeat the layers: noodles, sauce, ricotta, mushrooms, and mozzarella.
  • Finish with a final layer of noodles, remaining tomato sauce, and the rest of the mozzarella and parmesan cheese.

Bake:

  • Cover the baking dish with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
