Baked fish fillet rolls with Tomato and Cheese

Baked Fish fillet rolls with tomato and cheese stuffing is an easy-to-make dish from a small number of products, which can be served as an appetizer or for dinner. Fish rolls are baked in foil without a drop of oil or breading, which allows you to reduce the calorie content of the dish while preserving the juiciness of the fish.

Fish fillet rolls with Tomato and Cheese

Ingredients
  

  • lbs tilapia or pangasius fillets
  • 8 pcs cherry tomatoes
  • 4 pcs lettuce leaves for serving
  • 3 oz hard cheese
  • 2 tbsp seasoning for fish
  • salt and ground black pepper to taste

Instructions
 

  • Place the fish fillets on a cutting board, cover with plastic wrap and pound lightly with the flat side of a mallet.
  • Cut the cheese into thin slices.
  • Halve the tomatoes and remove the seeds with a teaspoon.
  • Cut the remaining fleshy part of the tomato pulp into large chunks.
  • Preheat the oven to 200 degrees.
  • Place about half of the fish fillets 2-3 layers (depending on size) on the baking sheet, overlapping.
  • Sprinkle with salt, ground black pepper and fish seasoning to taste.
  • Place about half of the cheese and chopped tomatoes on top of the fish fillet. Roll the fillet with the cheese and tomatoes into a tight roll.
  • Place the roll on a piece of foil and sprinkle with another pinch of fish seasoning if desired.
  • Wrap the fish roll tightly in the foil and twist the loose ends.
  • Place the foil-wrapped fish rolls with the tomatoes and cheese on a baking sheet, place in a preheated oven and bake for 25 minutes.
  • If desired, remove the foil and place the rolls back in the oven for an additional 4-5 minutes until lightly browned.
  • Remove from the oven and allow to cool for 5 minutes before serving.
  • Remove the foil from the cooked fish rolls.
  • Decorate the serving plate with lettuce leaves and tomato slices, if desired. Cut the rolls into portioned slices, place on the plate and serve.

Notes

  • You can use any seasoning, but it is good if it contains turmeric (as in this case) – it gives the roll an appetizing golden color.
  • Alternatively, you can cook the foil rolls in a skillet over medium heat for 15 minutes, turning every few minutes for even browning.
