Carpathian Vegetable Salad
Ingredients
- 8 pcs medium potatoes
- 10 pcs bell pepper
- 6 pcs medium tomatoes
- 1 pc onion
- 1 pc carrot
- 1 bunch parsley
- ½ tbsp sunflover oil
- 1 tbsp rice or pearl barley
- salt to taste
Instructions
- Fry the diced potatoes.
- Sauté the diced carrots, parsley, and onion, and at the end of sautéing add sliced bell pepper and tomatoes.
- Cook a crumbly porridge separately from rice or pearl barley.
- Mix the fried potatoes and sautéed vegetables, add porridge, a little broth, and stew until cooked.
- Serve hot.
