Ingredients
  

  • 1 cup dry beans
  • 1 pc carrot
  • 1 pc onion
  • 3 tbsp vegetable oil
  • 2 cloves garlic
  • salt and pepper to taste

Instructions
 

  • Soak the beans overnight. The next day, rinse them and cook until done.
  • While the beans are cooking, sauté the finely chopped onion and carrot in oil until golden.
  • Add the pressed garlic and sauté for another 1-2 minutes.
  • When the beans are done, drain them in a colander and let the water drain off.
  • Transfer the beans, sautéed onion, and carrot to a blender or food processor. Add salt and pepper to taste. Blend until smooth.
  • Transfer the pate to a clean container and refrigerate for a few hours before serving.

Notes

  • Soaking the beans overnight not only reduces the cooking time but also makes them easier to digest. If you’re short on time, you can use the quick-soak method: cover the beans with water, bring to a boil, then let them sit for an hour before cooking.
  • Don’t add salt or acidic ingredients like tomatoes or vinegar to the beans until they’re fully cooked, as these can make the beans tough.
  • Sautéing the onions and carrots until they’re golden brown (caramelized) will add a depth of flavor to your pate. Be patient and stir often to prevent them from burning.
  • If you prefer a chunkier texture, you can pulse the ingredients in the blender instead of blending them until completely smooth.
  • Don’t be shy with your seasonings! Beans can handle a lot of flavors, so feel free to add your favorite herbs and spices.
