  • 4 cups all-purpose flour
  • 1 cup currant jam or your preferred jam
  • 1 cup granulated sugar
  • 7 oz softened butter
  • tsp vanilla extract optional
  • ½ tsp baking soda
  • ½ tsp vinegar

Instructions
 

For dough:

  • Start by grating the softened butter, a process that will give your pie an exquisite crumbly texture. This finely grated butter will effortlessly blend with the other ingredients, creating a harmonious base for our pie.
  • In a mixing bowl, combine the grated butter, eggs, sugar, baking soda, vinegar, and optional vanilla extract. This medley of ingredients forms the heart of our pie, delivering a sweet and tangy note that will resonate with every bite.
  • Gradually introduce 4 cups of all-purpose flour to the mixture, gently folding it in. The flour melds with the other ingredients, creating a soft, pliable dough that’s ready to be transformed into our pie’s foundation.
  • Divide the dough into two portions: one larger (3/4) and one smaller (1/4). This division ensures that we’ll have enough dough for both the crust and the grated topping.
  • Now, take the smaller portion of dough and add the remaining flour gradually. This step allows the dough to reach the perfect consistency. If time allows, pop this portion into the refrigerator for about 30 minutes. It will become more manageable and easier to work with.

Assembling:

  • Preheat your oven to a glorious 390 ℉ (200°C). While it warms up, line a baking sheet with parchment paper, setting the stage for our culinary masterpiece.
  • Roll out the larger portion of dough onto the parchment paper, creating a pie’s crust. This canvas should be around ½ inches thick, providing a sturdy foundation for our sweet symphony.
