Ingredients

  • 1 pc egg
  • 1 tbsp vegetable oil
  • 1 tbsp 9% vinegar
  • 1 tsp sugar
  • 1 tsp mustard
  • ½ tsp salt

Instructions

  • Start by gathering all your ingredients and equipment. You’ll need a bowl and an immersion blender for this recipe.
  • In a bowl, pour 1 tablespoon of vegetable oil (or olive oil) as per your preference.
  • Add 1 teaspoon of sugar to the oil.
  • Follow with ½ teaspoon of salt for seasoning.
  • Add 1 teaspoon of mustard for flavor. You can use Dijon mustard or your favorite variety.
  • Crack open one egg and add it to the bowl. Make sure the egg is fresh.
  • Now, insert the immersion blender into the bowl, making sure it reaches all the ingredients.
  • Start blending the ingredients together. Move the immersion blender up and down to ensure everything is well combined. The mixture will gradually thicken as you blend.
  • Continue blending for about 3 minutes or until the mixture reaches a thick, creamy consistency.
  • Once your homemade mayonnaise is thick and creamy, it’s ready to use.
  • Transfer the mayonnaise to a clean container or jar with a lid for storage.

Notes

  • Always use fresh eggs for your mayonnaise. Freshness matters because it helps with emulsification and ensures a safe and delicious final product.
  • Allow your egg to come to room temperature before starting. This can aid in achieving a better emulsion.
  • While vegetable oil is the classic choice, feel free to experiment with olive oil or other oils to achieve different flavors. Keep in mind that using extra virgin olive oil can result in a stronger olive flavor.
  • Use good-quality mustard, whether it’s Dijon or another variety. The mustard not only adds flavor but also aids in emulsification.
  • When using an immersion blender, start on the lowest setting and gradually increase the speed as the mixture thickens. This helps ensure a smooth and creamy consistency.
  • Feel free to get creative with your mayonnaise by adding minced garlic, fresh herbs, or a squeeze of lemon juice for different flavor profiles.
  • If your mayonnaise separates or doesn’t emulsify correctly, don’t despair. Start with a fresh egg yolk in a clean bowl, and slowly whisk the separated mayo into it. This usually helps bring it back together.
