Ingredients
  

  • 3 pcs medium-sized eggplants
  • 1 pc tomato
  • 3 oz processed cheese
  • 2 tbsp oil
  • 3-4 cloves garlic
  • salt, ground black pepper,dill, and parsley to taste

Instructions
 

  • Wash the eggplants and pat them dry. Cut off the tails and slice the eggplants into long, thin strips.
  • Sprinkle the eggplant strips with salt and let them sit for 30 minutes. This helps remove bitterness from the eggplants. After 30 minutes, rinse the eggplant strips thoroughly to remove the salt.
  • Cut the tomato into small slices. Chop the herbs (dill and parsley) finely. Squeeze the garlic cloves.
  • Cut the processed cheese into small cubes.
  • Heat the oil in a preheated frying pan. Fry the eggplant strips on both sides until they turn golden brown. This will take a few minutes on each side. Remove them from the pan and let them cool slightly.
  • Lay out the fried eggplant strips on a clean surface. Brush each strip with the squeezed garlic for flavor. On the edge of each strip, place a slice of tomato, some cubes of processed cheese, a pinch of chopped herbs (dill and parsley), and season with salt and ground black pepper to taste.
  • Carefully roll up each eggplant strip, starting from the filled edge. To prevent them from unwrapping, you can secure the rolls with wooden skewers.
  • In a greased frying pan, place the eggplant rolls with the garlic and cheese. Fry them over low heat until the cheese inside the rolls melts and everything is heated through. This should take a few minutes.
  • Once the cheese has melted, remove the eggplant rolls from the pan. Place them on a serving dish, garnish with additional herbs if desired, and serve hot as a delightful appetizer or side dish.
