Chili Garlic Sauce

Ingredients
- 1 cup red chili peppers Thai or red jalapeños, stems removed
- ¼ cup water adjust as needed
- 8 cloves garlic peeled
- 2 tbsp distilled white vinegar
- 1 tbsp sugar
- 1 tsp salt
Instructions
- In a blender or food processor, combine the chili peppers, peeled garlic cloves, salt, sugar, and white vinegar. Pulse the ingredients until you achieve a coarse paste. You may need to occasionally scrape down the sides of the blender or food processor.
- Transfer the chili paste to a saucepan and add water. Bring the mixture to a simmer over medium heat.
- Reduce the heat to low and let the mixture simmer for about 15-20 minutes, stirring occasionally. This helps meld the flavors and develop the sauce’s consistency.
Notes
- If using Thai chili peppers, you can leave the seeds for extra heat or remove them for a milder sauce. If using red jalapeños, consider removing some seeds for a milder sauce.
- If the sauce is too thick, add a bit more water until you reach your desired consistency. Keep in mind that the sauce will thicken slightly as it cools.
