Ingredients
- 2 cups wheat flour
- 1 ⅔ cup kefir
- 10 oz cheese grated
- 2 tbsp vegetable oil
- 1 tsp baking soda
- ½ tsp salt
- ½ bunch herbs finely chopped
- 2 cloves of garlic finely chopped
Instructions
- In a deep bowl, pour the kefir and mix in the baking soda and salt. Let this mixture sit for 5 minutes to allow the kefir to react with the baking soda.
- After 5 minutes, add the flour to the kefir mixture and knead until you have a soft and elastic dough.
- Roll the dough into a ball, cover it with a towel, and leave it to rest for 30 minutes.
- While the dough is resting, grate the cheese on a coarse grater and finely chop the garlic and herbs.
- In a separate bowl, mix together the grated cheese, chopped garlic, and finely chopped herbs. This mixture will be your filling.
- Grease your work surface and hands with vegetable oil. Divide the rested dough into 4 equal parts, and roll each part into a small flatbread.
- Place a portion of the cheese, garlic, and herb filling in the center of each flatbread.
- Gather the edges of the flatbread in the center to enclose the filling and pinch it closed. You should end up with 4 stuffed balls.
- Gently flatten each stuffed ball and roll it out to make flat cakes.
- Heat some vegetable oil in a pan and fry the flatbreads on both sides until they turn golden and crispy.
- Place the fried flatbreads on paper towels to remove any excess vegetable oil.
- If desired, drizzle the flatbreads with a bit of butter for a creamy flavor.
