Homemade Marshmallows with Chocolate Drizzle

Ingredients
  

For marshmallows:

  • 2 pcs egg whites
  • 4 tbsp sugar
  • 1 tbsp lemon juice
  • A pinch of salt

For syrup:

  • 1 cup sugar
  • cup apple puree
  • ½ cup water
  • cup chocolate
  • 2.5 tsp Agar-agar

Instructions
 

Preparation of marshmallows:

  • In a deep bowl, add the egg whites and a pinch of salt. Whip them until they form white fluffy foam.
  • Gradually add the granulated sugar 4 tablespoons to the whipped egg whites while continuing to beat. Whip for about a minute at high speed.
  • Pour in the lemon juice and continue to whip until stiff peaks are formed.
  • Prepare a pastry bag with a closed twisted star nozzle.

Preparation of the Chocolate Drizzle:

  • In a saucepan, combine the sugar, water, agar-agar, and apple puree to make the syrup.
  • Cook the syrup mixture on medium-high heat until it comes to a boil.
  • The boiling syrup should be in liquid form. Once it reaches this state, pour it into the whipped egg white mixture in a thin stream while beating at medium speed using a mixer.
  • After all the syrup has been incorporated into the egg white mixture, increase the mixer speed and whip the future marshmallow for a couple of minutes.
  • Transfer the marshmallow mixture into the prepared pastry bag with the nozzle.
  • Immediately pipe the marshmallows onto parchment paper or a silicone baking mat.
  • Melt the chocolate using a water bath and transfer it to a pastry bag.
  • Drizzle a thin stream of melted chocolate over the marshmallows to decorate them.
  • Place the marshmallows in the refrigerator for 10-15 minutes to allow them to set.
