Kefir Muffins with Raisins Recipe
With our Kefir Muffins with Raisins Recipe, you’ve unlocked the secret to baking perfection in your kitchen.
Ingredients
- 2 pcs large eggs
- 1 ¾ cups all-purpose flour
- 1 cup kefir
- ¾ cup granulated sugar
- ½ cup raisins
- 7 tbsp butter
- 1 tsp vanilla sugar
- 1 tsp baking powder
- 1 pinch salt
Instructions
- Beat eggs with sugar using a mixer for about 5 minutes until fluffy.
- Add kefir, flour, baking powder, melted butter, and vanilla sugar. Mix everything thoroughly to form a smooth batter.
- Add raisins to the batter and mix them in evenly.
- Fill muffin molds about 2/3 full with the batter.
- Preheat the oven to 390°F (200°C).
- Bake the muffins for approximately 30 minutes or until they turn golden brown.
- Once baked, remove the muffins from the oven and allow them to cool.
- Optionally, you can sprinkle powdered sugar on top before serving.
Notes
- Ensure that your eggs, kefir, and butter are all at room temperature before you start. Room-temperature ingredients mix more easily and evenly, resulting in a smoother batter.
- When combining the wet and dry ingredients, mix just until everything is incorporated. Overmixing can lead to tough muffins. It’s okay if the batter has a few lumps; they’ll disappear during baking.
- If you prefer plumper raisins in your muffins, you can soak them in warm water or orange juice for about 15 minutes before adding them to the batter. Drain them well before mixing them in.
- To prevent your muffins from sticking to the muffin tin and for easy cleanup, consider using paper muffin liners or greasing the muffin cups lightly with butter or non-stick cooking spray..
- Resist the temptation to open the oven door to check on the muffins before they’ve had a chance to bake for at least 20 minutes. Opening the door prematurely can cause the muffins to collapse.
