No-Bake Pumpkin Dessert
An interesting way to cook pumpkin for an interesting pumpkin dessert.
Ingredients
- 1 lb pumpkin
- 1 pc orange
- 4 tbsp water
- 2 tbsp honey
- 2 tsp dry gelatin
- coconut shavings to taste
Instructions
- Boil the pumpkin. To do this, peel the pumpkin and cut it into cubes. Put the pumpkin in a pot and pour water over it. The water should cover the level of the pumpkin 3 fingers above. Boil the pumpkin for 40 minutes.
- Dissolve the gelatin in the water and leave to swell.
- When the pumpkin is boiled, drain the water and let cool.
- To the cooled pumpkin add orange juice and honey.
- Using an immersion blender, pulverize the pumpkin to a puree.
- Slightly warmed gelatin add to the pumpkin mass and beat with a blender.
- Spread the ready pumpkin mass into molds and send to the refrigerator for 1 hour.
- Before serving, sprinkle the dessert with coconut shavings
Notes
- If you use silicone molds, there’s no need to grease them.
- If you use glass plates as containers, grease them with a thin layer of sunflower oil if you plan to take out the dessert.
- You don’t need to grease the molds if you’re serving the dessert directly in the plates
