Ingredients
  

For dough:

  • 2 cups wheat flour
  • 1 pc large egg
  • ½ cup milk
  • 2 tbsp olive oil or vegetable oil
  • ½ tsp salt

For stuffing:

  • 5 pcs potatoes
  • 1 pc onion
  • 4 tbsp butter
  • 2 tbsp olive oil or vegetable oil
  • ground black pepper to taste

For sauce:

  • 1 pc onion
  • 1 bunch green onion
  • 1 tbsp butter
  • ½ tsp sugar

Instructions
 

For dough:

  • Sift the flour and salt through a sieve.
  • Mix with eggs, milk, and olive oil (vegetable oil).
  • Roll the dough into a ball, place in a bowl, cover, and leave for 30 minutes.

For stuffing:

  • Wash and peel the potatoes. Place in a pot, pour water two fingers above the potatoes, put on the stove, and bring to a boil. Cook on low heat for 30 minutes.
  • Heat a frying pan with olive (vegetable) oil and fry the onion until golden, stirring frequently, about 6 minutes.
  • Drain the water from the cooked potatoes and mashed potato with butter. Add fried onions, salt, pepper and mix.

For sauce:

  • Peel and finely chop the onions. Melt butter in a skillet over medium heat and fry the onions until dark golden for 10 minutes.
  • Add the sugar and cook, stirring frequently, for another 2 minutes. Remove from the heat, transfer to a bowl, and leave in a warm place.

Assembling:

  • Roll out the dough for the vareniki into a thin layer. Cut out circles with a diameter of about 3 inches.
  • Spread the filling on the circles, fold them in half, and seal the edges with wet hands.
  • Place the vareniki in boiling salted water. When they float, cook for 1 minute more.

Serving

  • Place the finished vareniki with potatoes in a bowl with caramelized onions, stir and serve. You can garnish with thinly sliced green onions.

Notes

You can also serve it with sour cream.
