Ingredients
  

  • 8 oz linguine
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • ½ tsp red pepper flakes to taste
  • 1 lb. mixed seafood shrimps, scallops, mussels, or clamps
  • 1 can diced tomatoes 14 oz, drained
  • ½ cup chiken borth
  • ¼ cup fres parsley chopped
  • salt and pepper to taste
  • grated Parmesan cheese for serving

Instructions
 

  • Cook the linguine according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until the garlic is fragrant.
  • Add the mixed seafood to the skillet and cook for 2-3 minutes, or until they start to turn opaque.
  • Pour in the white wine and let it simmer for another 2 minutes to cook off the alcohol.
  • Stir in the diced tomatoes and chicken broth. Season with salt and pepper to taste. Simmer for 5-7 minutes until the seafood is fully cooked and the flavors meld together.
  • Add the cooked linguine to the skillet and toss everything together until well combined.
  • Sprinkle fresh parsley over the top and toss again.
  • Serve the seafood linguine on individual plates, and top with grated Parmesan cheese.
