Seafood Linguine
A medley of shrimp, scallops and clams, this divine dish is a celebration of flavors that combines the freshness of the sea with the warmth of linguine. Perfect for those busy evenings when you crave something extraordinary without the fuss.
Ingredients
- 8 oz linguine
- 2 tbsp olive oil
- 4 cloves garlic minced
- ½ tsp red pepper flakes to taste
- 1 lb. mixed seafood shrimps, scallops, mussels, or clamps
- 1 can diced tomatoes 14 oz, drained
- ½ cup chiken borth
- ¼ cup fres parsley chopped
- salt and pepper to taste
- grated Parmesan cheese for serving
Instructions
- Cook the linguine according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until the garlic is fragrant.
- Add the mixed seafood to the skillet and cook for 2-3 minutes, or until they start to turn opaque.
- Pour in the white wine and let it simmer for another 2 minutes to cook off the alcohol.
- Stir in the diced tomatoes and chicken broth. Season with salt and pepper to taste. Simmer for 5-7 minutes until the seafood is fully cooked and the flavors meld together.
- Add the cooked linguine to the skillet and toss everything together until well combined.
- Sprinkle fresh parsley over the top and toss again.
- Serve the seafood linguine on individual plates, and top with grated Parmesan cheese.
