Roasted Beets with Feta Cheese Salad
Let's prepare a simple, easy, and healthy salad of roasted beets with feta cheese. Bright and tasty, it can decorate both a festive and everyday table.
Ingredients
For salsd:
- 4 pcs medium-size beet
- 3 ½ oz feta cheese
- 2 oz wulnuts
For dressing:
- 1 bunch argulia
- 4 tbsp olive oil
- 1 ½ tbsp balsamic vinegar
- 1 tbsp lemon juse
- ground pepper to taste
- salt to taste
Instructions
- Wash beets thoroughly and pat dry with a paper towel.
- Wrap each beet individually in foil and bake in a preheated oven at 375°F (190°) for 1 hour.
- Peel and dice the beets.
- Also, dice the feta.
- In a separate bowl mix all the ingredients for the dressing.
- Place arugula leaves in a salad bowl, and splash with dressing.
- Top with beet, and feta, drizzle with the remaining dressing, then place chopped nuts on top.
- Enjoy your salad!
Notes
Beets can be boiled, but if they are baked, they will retain much more vitamins and useful substances than boiled ones.
