Rosolnik with pearl barley – a traditional Ukrainian soup that’s perfect for cold days when you need something warm and comforting. This soup is packed with flavor and nutrients, making it a great choice for anyone looking for a healthy and delicious meal.

Rosolnik with pearl barley
Ingredients
- 1 lb beef
- 1 pc onion
- 2 pcs carrots
- 2 pcs potatoes
- ½ cup pearl barley
- 3 pcs pickles
- ¼ cup pickle juice
- salt and pepper to taste
Instructions
- Chop the meat into large diced pieces.
- Grate the carrots on a coarse grater or cut them into very small cubes.
- Chop the pickles the same way as carrots.
- Chop the onions.
- Rinse the pearl barley thoroughly.
- Put all ingredients in a pot and add water to cover everything by about an inch.
- Bring to a boil, then reduce heat and simmer for about an hour.
