Sautéed Shrimps with Chili and Rosemary

Ingredients
- 1 lb peeled shrimps
- 3 cloves garlic sliced
- ¼ cup olive oil
- ⅞ cup white wine
- fresh rosemary
- dried chili peppers
- sea salt to taste
- chopped parsley to taste
Instructions
- Start by seasoning the peeled shrimps with a pinch of sea salt. This will enhance their flavor when cooked.
- Heat the olive oil in a deep frying pan or skillet over medium-high heat.
- Add the sliced garlic cloves to the hot olive oil and sauté for about a minute until they become fragrant and lightly golden.
- Next, add fresh rosemary leaves and dried chili peppers to the pan. The amount of chili can vary depending on your heat preference, so adjust it to your taste. Sauté the rosemary and chili with the garlic for another minute to release their flavors.
- Now, add the seasoned shrimps to the pan. Cook the shrimps for about 2-3 minutes on each side or until they turn pink and opaque. Be careful not to overcook them, as shrimps can become tough if cooked for too long.
- Deglaze with White Wine: Pour in the white wine to deglaze the pan. Stir the shrimps and wine together, scraping up any browned bits from the bottom of the pan. Allow the mixture to simmer until the sauce thickens slightly. This should take about 3-5 minutes.
- Finish with Herbs: Finally, add chopped parsley to the sautéed shrimps. You can also sprinkle in a bit more fresh rosemary for added flavor. Stir everything together to combine.
