Seafood Pan Roast with Smoky Garlic Butter
Ingredients
- 1 lb large shrimp peeled and deveined
- 1 lb sea scallops
- 1 lb mussels cleaned and debearded
- 1 lb new potato halved
- 1 cup cherry tomatoes
- 2 tbsp smoked paprika
- 1 tbsp fresh lemon juice
- 1 brunch asparagus trimmed
- 4 cloves garlic minced
- fresh parsley chopped, for garnish
- salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- In a small bowl, mix the melted butter, minced garlic, smoked paprika, lemon juice, salt, and black pepper to create the smoky garlic butter.
- Place the halved baby potatoes on a baking sheet. Drizzle with a portion of the smoky garlic butter and toss to coat. Roast in the preheated oven for about 15 minutes, or until the potatoes start to soften.
