Ukrainian-inspired treats: Shulyky with Honey and Poppy Seeds
Shulyky is a simple folk dish of Ukrainian cuisine. In the past, shulyky were prepared on the feasts of Honey and Apple Savior. They were lean, without adding milk, eggs, and butter to the dish, and were simple cakes, which after baking were broken into pieces and poured with sweet poppy milk.
I propose to prepare a more mellow version with the addition of milk, egg, and butter. It turned out to be an interesting dessert. To prepare shulik we will need flour, milk, butter, honey, soda, citric acid, egg, and poppy.

Shulyky with Honey and Poppy Seeds
Ingredients
- 1 pc egg
- 2 cups wheat flour
- ½ cup water
- ¼ cup milk
- 8 tbsp poppy seeds
- 8 tbsp honey
- 1 tbsp butter
- ¼ tsp citric acid
- ¾ tsp baking soda
Instructions
- Wash the poppy seeds and pour boiling water over them. Leave them to soak for 30 minutes, well covered.
- In a bowl, combine egg with honey and melted butter. Add milk and mix well. Incorporate 1 tablespoon of prepared poppy seeds.
- Add wheat flour sifted with citric acid and baking soda. Knead the ingredients to form the dough.
- Roll out the dough to a thickness of ½ inches.
- Transfer the rolled-out dough to a baking dish lined with parchment paper.
- Cut the dough into pieces approximately 1 x 1 inches.
- Bake the pieces for about 20 minutes at 356ºF (180°C)or until they turn golden.
- Drain the water from the soaked poppy seeds. Grind the poppy seeds in a mortar until poppy milk forms.
- Gradually add boiling water to the poppy mixture, one tablespoon at a time, while constantly rubbing.
- Once the poppy seeds turn white and poppy milk is released, add honey and knead well.
- Pour the prepared poppy milk over the baked hot cakes.
- Stir the mixture and let it stand for at least 1-2 hour
