Patatas Bravas
Delicious potatoes with a tasty sauce, everything you need to make a hearty dinner or a tasty lunch.
Ingredients
For Patatas:
- 2 lbs your favorite potatoes
- olive oil extra virgin
- salt
For Brava Sauce:
- 1 cup vegetable or chicken broth
- 4 tbsp olive oil extra virgin
- 1 tbsp all-purpose flour
- 1 tbsp sweet paprika
- 1 tbsp spicy paprika
- 5 cloves garlic finely chopped
- salt to taste
Instructions
For Patatas:
- Start by choosing your potatoes wisely. Russet or Yukon Gold varieties work wonders for the ultimate crispiness.
- Peel the potatoes, ensuring you remove any blemishes.
- Cut the peeled potatoes into bite-sized pieces, ensuring they’re uniform for even cooking. A 1-inch cube is ideal.
- Rinse the potato cubes under cold water to remove excess starch. This will help achieve that coveted crispiness.
- Heat a generous amount of extra virgin olive oil in a deep pan or fryer to about 325°F (160°C).
- Carefully add the potato cubes to the hot oil, ensuring they’re not overcrowded. Fry them for about 5-7 minutes, or until they’re soft and just starting to turn golden.
- Remove the partially cooked potatoes and let them drain on paper towels to remove excess oil.
- Raise the oil temperature to 375°F (190°C).
- Return the par-cooked potato cubes to the hot oil and fry for another 2-3 minutes until they turn golden brown and crispy. This double-frying technique is the secret to achieving that perfect crunch.
- While the potatoes are still hot, sprinkle them with a pinch of salt to enhance their flavor.
For Brava Sauce:
- In a separate pan, heat 4 tablespoons of extra virgin olive oil over medium heat.
- Add the finely chopped garlic cloves and sauté until they turn aromatic and lightly browned. This is where the sauce gets its depth of flavor.
- Sprinkle in the all-purpose flour and stir continuously for about a minute. This creates a roux that will help thicken the sauce.
- Quickly add both sweet and spicy paprika, and stir to combine. The paprika infuses the sauce with its characteristic smokiness and heat.
- Pour in the vegetable or chicken broth while stirring constantly. The sauce will begin to thicken and take on a rich, reddish hue.
- Keep stirring until the sauce reaches your desired consistency. If it becomes too thick, you can always adjust by adding a touch more broth.
- Season the bravas sauce with a pinch of salt to suit your preference.
Notes
- For an extra kick, add diced fresh chili peppers to the sauce.
- Experiment with different paprika varieties for unique flavor profiles.
- Elevate the dish by using garlic-infused or chili-infused olive oil for frying.
- Make it indulgent by grating some sharp cheddar or tangy feta over the Patatas Bravas before serving.
- Pair the dish with lemon wedges or a simple green salad to balance the richness.
- Pickled vegetables or olives also make excellent accompaniments.
- Get creative with different potato types like sweet potatoes or purple potatoes for a colorful twist.
