Sumptuous White Wine Mussels
Ingredients
- 2 lbs fresh mussels.
- ¼ cups white wine
- 1 tbsp thyme
- 1 tbsp olive oil
- 1 bunch parsley
- 5 cloves garlic
- 1 pinch chili pepper optional
Instructions
- Clean the mussels well: put them in a bowl of water and leave for about half an hour. Change the water and leave for another half hour to clean out all the sand. Then, using a knife, scrape the shell to remove any impurities and pull off the outer beards.
- Chop two cloves of garlic with the chili, parsley and thyme. Set aside.
- Put olive oil in a pan with 3 crushed garlic cloves, bring to the boil and let them brown
- Add the white wine and, when it comes to the boil, add the mussels. Stir, cover and leave for about two minutes.
- Sprinkle the mussels with the chopped herbs and stir.
- Once the mussels are open, remove from the heat and serve

- Seek out the plumpest, most pristine mussels you can find. Their quality is key to this dish’s success.
- Not a fan of spicy food? No problem! Simply omit the chili for a milder version of this dish.
