Ingredients
  

  • 2 lbs fresh mussels.
  • ¼ cups white wine
  • 1 tbsp thyme
  • 1 tbsp olive oil
  • 1 bunch parsley
  • 5 cloves garlic
  • 1 pinch chili pepper optional

Instructions
 

  • Clean the mussels well: put them in a bowl of water and leave for about half an hour. Change the water and leave for another half hour to clean out all the sand. Then, using a knife, scrape the shell to remove any impurities and pull off the outer beards.
  • Chop two cloves of garlic with the chili, parsley and thyme. Set aside.
  • Put olive oil in a pan with 3 crushed garlic cloves, bring to the boil and let them brown
  • Add the white wine and, when it comes to the boil, add the mussels. Stir, cover and leave for about two minutes.
  • Sprinkle the mussels with the chopped herbs and stir.
  • Once the mussels are open, remove from the heat and serve

  • Seek out the plumpest, most pristine mussels you can find. Their quality is key to this dish’s success.
  • Not a fan of spicy food? No problem! Simply omit the chili for a milder version of this dish.
