Classic Chocolate Brownie

The chocolate brownie has an irresistible charm that captures hearts and palates whether enjoyed warm and gooey or chilled and firm.

Ingredients
  

  • 2 pcs chicken eggs
  • ½ cup flour
  • 4,½ oz sugar
  • 4 oz butter
  • 4 oz bitter dark chocolate
  • 2 tbsp cocoa powder
  • ½ tsp leavening agent
  • pinch salt

Instructions
 

  • Beat the eggs in a deep bowl. Add all the sugar to the eggs and beat with a whisk or mixer until lightened.
  • Break the chocolate into small pieces in a deep glass bowl or plate. Add the butter to the chocolate and melt, mixing thoroughly.
  • Pour the slightly cooled chocolate mixture into the eggs and sugar. Stir thoroughly.
  • Combine all the dry ingredients, sift and, add to the chocolate mixture. Mix thoroughly.
  • Line a square mold with baking paper. If you have a silicone mold, you do not need to use paper.
  • Spread all the batter into the mold and flatten with a spatula.
  • Bake the brownies in a preheated oven to 340℉ (170°C) degrees for 35 minutes.
  • Check the brownie with a wooden skewer, a crust should form on top and the inside of the brownie should remain slightly moist, but not soggy.
  • Remove the brownies from the mold, let cool slightly and, cut into squares.

Notes

  • Use good dark chocolate and quality cocoa powder, it will give a richer flavor. The butter should have a fat content of at least 82%.  
  • Do not over-dry the brownie, its zest is in the moist, slightly stretchy consistency inside.
  • If desired, you can decorate the brownie. Pour some caramel on top and use a wooden skewer to make patterns. Or sprinkle with some nuts or chocolate chips.
