Grechaniki – A Taste of Tradition
Grechaniki is a dish in Ukrainian cuisine, prepared from ground meat with cooked buckwheat. The proportions of minced meat and buckwheat can be varied depending on your preferences. They can be cooked as cutlets or stewed in sauce for a softer and juicier texture. The recipe for buckwheat with mushroom sauce is delicious, but other sauces are also good. I cooked buckwheat with homemade tomato sauce, it turned out very tasty, juicy, and flavorful.

Ukrainian Grechaniki Recipe
This recipe will give you a taste of Ukrainian traditional cuisine.
Ingredients
- 1 lb meat you can use beef, pork, or a combination
- 5 oz buckwheat groats
- 7 oz tomato sauce homemade or store-bought
- 2 pcs eggs
- 2 pcs onions
- 3 tbsp flour for breading
- 3 tbsp vegetable oil for frying
- salt and pepper to taste
Instructions
- Rinse the buckwheat groats and cook them in boiling salted water until tender. Once cooked, let them cool down.
- Put the meat through a meat grinder along with one of the onions. Add eggs, salt, and pepper to taste. Mix thoroughly to create the meat mixture.
- Combine the minced meat mixture with the cooked buckwheat groats and mix well.
- Shape the mixture into cutlets and roll them in flour.
- Heat vegetable oil in a pan and fry the cutlets on both sides until they turn golden brown.
- Slice the second onion into half rings and fry them in vegetable oil until they become golden. Then, pour in the tomato sauce and heat through.
- Place the fried cutlets in the pan with the sauce. Cover with a lid and let them simmer over low heat for 20 minutes.
- Your Grechaniki are ready to be served! They should be appetizing, hearty, and very tasty.
